Tonight’s dinner was amazing. I’m not a food blogger…I do talk about food sometimes, particularly my outstanding thin crust pizzas, but I’m not prolific. However, tonight’s dinner deserved a post of its own…the menu was chosen by hus, who had bought a beef roast yesterday to team up with the potatoes we are trying to use up before they sprout and the brussels sprouts I bought for myself (hus isn’t normally fond of those tiny little cabbages). He roasted the beef with a horseradish and herb crust to medium rare perfection and made twice baked potatoes. I followed the recipe he had chosen for the brussels sprouts, cutting the sprouts in half, coating with oil, cooked covered on the stove top in a splash of olive oil on medium for 5 minutes, then a while at a higher heat until they start to caramelize…a sprinkle of salt and pepper, a little more caramelizing, a sprinkle of parmesan and onto the plate…ohmygosh…there was nothing on my plate tonight that I didn’t love…I did save a little bit of room for a couple of squares of sea salt and almond chocolate and a glass (or two) of Jester 2006 Vintage Shiraz…all I can say is WOW and yum and good night to all!
